This syrup is collected on our own 116 acres of Big Leaf Maple trees.  Trees in Eastern Canada have a much higher sugar content in their sap and are grown in groves.  Ours are spread out between alders and bogs, creeks and stumps.  This means a lot of time collecting and even more time sugaring off to get to the the required sugar levels to produce maple syrup.  A deep dark colour with a molasses undertone to the maple sweetnes..
